Heat ghee and fry onions till golden. Add ginger-garlic paste,garam masala powder,salt and pepper to taste. Fry well. Add tomato puree and keep stirring on low heat for 5 mts. Add green peas are done. Dissilve saffron and flour in one cup milk to a smooth paste .<br />
Grind cashewnuts with a little milk and add to the above mixture. Add the milk mixture to the green pea-tomato puree in the pan and keep stirring constantly,till the gravy thickens. Add paneer slices, cover the pan and simmer on low heat for 5 mts. Remove from heat. Garnish with almond slices, green chillies, raisins and coriander leaves.<br />

<b> </b>Skin yhe bananas, cut into long pieces or round pieces and keep aside. Soak rice in water for half an hour and grind in mixer for making paste. Grate the paneer .fry the onions in one tsp .ghee.then add tomato . Salt and black pepper and cook<br />
Fry rice in hot butter and add water .salt and cook the rice.<br />
Take a baking dish and make a thick layer of rice on it. Make another layer of paneer puree on it and then another layer of rice and after this ,another layer of paineapple cream and another layer of plane rice and put in hot over for 2 minutes.<br />
After 2 minutes, keep the baking dish aside<br />

Serve the rice in rice plate with banana raita and granish it with dry frutes .<br />

<b>PREPARATION</b><br />

<b> </b>Clean and cut the yellow cucumber into cubes. Cook this with the other ingredients in about one and a half cup of water. Grind the coconut ,cumin seeds and turmeric powder into a fine paste and add crushed ginger and garlic to it. Beat the curd and add to the cooked cucumber,allow the mix to boil. Then add the ground masala and warm the whole curry for a minute or two. Remove from fire. Heat the oil in a frying pan and add fenugreek followed by mustard. As soon as they burst add the red chilly,onion and curry leaves,saute slightly and add the chilli powder. Remove from fire at once and pour into the curry. Stirr so that the seasoning reaches every particle of the curry. The curry is now ready for use.<br />
Do be sure to make this curry when there are meat or fish dishes. Or on days when you are pressed for time and you need a curry,or just when you feel like making a simple but tasty curry.<br />

<b> </b>Make cooked starch with 3 tbsp rice powder and water,boiling the whole,stirring well.Let cool. Ferment the yeast by mixing it with a little warm water and sugar.Knead the rice powder,cooked starch,yeast or toddy and water into a soft dough. Keep for 8 to 10 hours. Grind the coconut,cumin seeds and garlic into a coarse pastw. Add salt,sugar and the coconut paste to the dough which has now risen. Aftee 1 or 2 hours,the batter would have risen well. Stir well. Heat the dosa griddle or a non stick pan and smear a little oil on it. Pour 1 ladle of the batter in the centre of the dosa griddle or the non stick pan. Do not spread the batter but allow it to sptead on its own. Close with a l8d. When half done flip over and cook the other side.Remove when done.<br />
Vallayappam is thick but soft and is a tasty dish especially when combined with a meat curry or potato curry. Vellayappam tastes even better when toddy is used instead of yeast.<br />

<b>PREPARATION</b><br />

Several steps are to be followed in order to make tasty palappams.Here they are one by one.<br />
<br />
1. Preparing the batter-Soak the raw rice in watee for 2 or 3 hours after washing it thoroughly.Drain the water and start grinding the rice along with the coconut adding water.When the grinding is 80% done remove 2 or 3 tbsps of the batter in to another pan.Continue grinding the rice and coconut until it becomes a nice paste.Keep in a large vessel.Add 1 1/2 to 2 cups of water to the batter which had been earlier transferred to another pan. Heat this mixture stirring continuously until it boils and thickens.Remove from fire and allow to cool.This is called 'kappy' or cooked starch.<br />
<br />
2.Preparing the yeast-Put the yeast in a cup.contain8ng 50ml of lukewarm water and 1 tbsp of sugar. Stir well and keep aside for 20 to 30 minutes during which time the yeast will rise and froth.<br />
<br />
3. Add the cooked ,cooled starch and the frothy yeast to the rice batter.Mix well by hand so that there are no lumps in the batter. Qdd wter if necessary. Cover the vessel and leave the batter to ferment at room temperature.<br />
<br />
4. Aftee 10 to 12 hours the batter will rise and come up to the brim of the vessel. Then stir well,add salt,some more sugar and water if necesary. The batter should be a little looser than dosa batter.Keep aside for 1 or 2 hours to feement again.<br />
<br />
5. Take the special pan that is used to make appam.This pan is a small bowl with a flat lid made of cast iron.The inside of the pan is smooth and allows the batter to flow freelymThe best results in making appam are achieved if they are made in a proper appachatty.<br />
<br />
6. Heat the appachatty and apply a drop of sesane oil on the inside of the appachatty. Pour one ladle of batter into the appachatty which has now become miderately hot. Take the chatty in both hands and swirl once.The batter spreads evenly in the appachatty. Place on the flame and close the appachatty with its lid. Open after 1 or 2 minutes.If the edges are slightly brown the appam is done and can be removed using a spatula.With this batter it is possible to make 20 to 25 appams.<br />
