Chicken Pineapple Skewers with Sauteed Vegetables

Preparation time : 15 mnts; Cooking time : 20 mts


INGREDIENTS

Chicken breasts  - 120 gm
Slice pineapple   -  1
Yellow bell pepper ,diced - 1/2
Mushrooms         -  4
Chilli flakes        -    1 pinch
Mix of cauliflower ,
Broccoli and cucumber - 60 gm
Soya sauce      - 2 tsp
Italian herb seasoning  - 1 pinch

METHOD

1. Make cubes of the chicken breast to make           skewers with pieces of pineapple and bell           pepper in between. Finish with the                       mushrooms.
2. Roll the skewers in chilli flakes,seasoning           and sea salt.
3. Use a non-cooking spray on a grill or frying       pan or on the arranged skewers. Cook for 15-     20 minutes.
4. Stir fry the cauliflower, broccoli and                     cucumber with soya sauce, mixed herbs and
    Chilli flakes to taste and serve as a side dish.
